Miss Can Mackerel Fillets in Olive Oil with Thyme and Lemon and Lentil Salad

Ingredients:
- 4 tins Mackerel Fillets in Olive Oil with Thyme and Lemon
- 4 cups Lentils, cooked
- 2 tbsp Olive Oil
- ¼ cup Bacon, sliced
- ¼ cup Garlic, chopped
- 4 Onion, small -julienned
- ¼ cup Red Wine Vinegar
- 1 pinch Salt
- 1 tbsp Thyme, fresh
Instructions
Add vinegar to the chopped onion and set aside for 5 minutes. Strain and remove onion, reserve vinegar.
Sauté the bacon until golden brown in olive oil; add the onion, salt and cook over low heat. Deglaze with vinegar, reduce to low heat; add the thyme. Combine all ingredients with the lentils. Adjust salt to taste and serve along the Mackerel Fillets.
