Miss Can Marinated Mussels Taco

Ingredients:
- 4 tins Miss Can Marinated Mussels
- 12 Flour or Corn Tortillas
- 12 Lettuce leaves
- 4 Tomato, chopped and seeded
- 2 Avocado, diced
- 2 Carrots, grated
- ½ Lemon, sliced thinly
- 4 small Onions, thinly sliced (julienned)
- 1 pinch Salt
- 1 tbsp Sugar
- 2 tbsp Olive Oil
- ½ cup Port Wine
Instructions:
Heat a skillet over medium-low heat.
Slowly sauté the onions in olive oil, adding salt and stirring constantly until softened
Deglaze with Port Wine, add sugar and continue to sauté over low heat until the wine is reduced and the onions are caramelized.
To prepare the tacos—heat the tortillas until warm.
To assemble-- fill warm tortillas with lettuce leaves, add the avocado, tomato, mussels, top with caramelized onion, and carrots. Squeeze lemon slice over the tacos and serve- 3 tacos per person.
